Zucchine Ripene
(Grilled Goat Cheese
Stuffed Zucchini)
4 medium zucchini or summer squash
3 medium garden tomatoes
4 ounces Harley Farms goat cheese
2 cloves garlic, minced
¼ cup fresh basil, chopped
½ cup fresh French bread crumbs
1 tablespoon olive oil
Salt and pepper to taste
1 cup grated Grana Padano cheese
Cut the top and the bottom off of the
zucchini and cut in half lengthwise.
Using a spoon, remove the seeds from
the zucchini. In a medium size mixing
bowl, combine the goat cheese, garlic,
basil, bread crumbs, olive oil, salt and
pepper. Fill the zucchini halves with
½ cup of the goat cheese mixture and
sprinkle with Grana Padano. Set grill
on medium-low heat and grill zucchini
until tender, approximately 15 to 20
minutes. Serves 4
