Wine
After visiting as many of the domestic wine & cheese producers as we could before opening, TCC has selected a wide variety of wines from different regions. We strive to bring you an eclectic mix of wines that you don’t find everywhere to give you an alternative to the grocery store inventory.

We try to keep the price points friendly, too! The majority of our inventory is between $7 and $15.

A small percentage of our selections rotate in order to feature small production wines and wines perfect for the current season. Our helpful staff can tell you everything you need to know about our wines and how to pair them with our cheeses or your dinner. We also hold wine tastings twice a week. Check out our current newsletter for this month’s events.

We offer a 15% case (12 bottles) discount that applies to mixed cases, too!

Our selections will include wines that you can pre-order to ensure availability and great wines for your cellar that are not available in-store. Please note that all wines are available on a first-come, first-served basis and are subject to availability. Single bottles may be ordered and the standard case discount of 15% will apply to these wines. Also, some wines are available only for pre-order and the order deadline will be noted where applicable. Liberty School Syrah

Syrah has found a home in California’s Central Coast growing region, where distinctive soils and climate contribute to wines of excellent depth and character.  Fruit was sourced from vineyards throughout Paso Robles where the varietal benefits from high limestone content.

The 04 growing season in Paso Robles was exceptional.  The vines matured relatively quickly following a warm spring.  Vines were perfectly in balance with specific vineyard sites.  A fairly cool summer ended with a heat spike during the last week of August.  While sugars increased rapidly and caused many growers to pick early, Liberty School allowed the fruit additional time on the vine to bring acidity and pH into balance.

The 04 Syrah is nicely extracted with a beautiful violet hue.  It’s up front fruit aromas and flavors of mulberry and blueberry are complemented by full notes of exotic spice and cigar tobacco.  The wine has a robust mineral backbone with well integrated, silky tannins that finish through the length of the palate.  It’s an excellent choice for pairing with grilled, braised or roasted meats and game, pizza, as well as soft and moderately aged cheeses.

Stags’ Leap Napa Valley Viognier

This wine is a personal favorite of winemaker Kevin Morrisey.  For the past twelve years Viognier has been used as an indispensable blending varietal in the Petite Syrah, but is wasn’t until 1998 that the wine found its own bottle.  Kevin’s ongoing dedication to the wine as an expression of its Carneros terroir comes through in the concentration and elegance of the Stags’ Leap Viognier.
         
Harvested by hand, the fruit was whole cluster pressed and fermented in three-year-old French oak barrels.  It was then aged on the lees and stirred every two weeks for eight months.  Kevin prefers to not let this wine go through malolactic fermentation resulting in a wine that presents its delicate floral aromas and fruit characteristics from the first sip to the last.

Intensely rich and distinctive, this Viognier features pleasing notes of honey suckle, lemon blossoms and spice on the nose, which transition to fresh white peaches and citrus characteristics on the palate, together with a creamy mouth feel that carries on throughout the long, luscious finish.

King Estate Pinot Gris

2005 was indeed another great vintage.  Bud break started early in most vineyards but flowering was about normal for Oregon – between the first and second week in July.  Poor weather conditions during flowering resulted in low yields for many vineyards in the Willamette Valley.  Fortunately, Mother Nature was kinder at King Estate and they had normal to high yields complemented by excellent quality.  Fruit maturity progressed at a nice slow pace giving the vines time to develop optimum varietal characteristics.  Harvest at King Estate lasted from September 30th until October 22nd.

Pale yellow with brilliant luminosity in color, with aromas of pear, apple, tropical fruit, lemon, white peach and spice.  Flavors of lemon, pineapple, pear and lime, with a crisp acidity, nice mouth feel and a full bodied texture.

Barnett Savoy Vineyard Pinot Noir

The Anderson Valley AVA is located in Mendocino County about 25 miles from the pacific coast.  The days often start out foggy and cool though warm up into the low 100s during the peak of the growing season.  The influence of this coastal fog and the silty-clay alluvium gives delicate aromatics of candied dark fruits, rose petals, brown spices along with silky tannins and firm acidity.
          
This hand picked Pinot Noir was cold soaked for 6-9 days under dry ice in small open top fermenters and punched down tow to three times daily.  Both the alcoholic and malolactic fermentations were completed through indigenous cultures, none added.  The wine was aged in 60% new French oak for 11 months sur lee.  These 10 barrels were racked and blended before bottling and being lightly filtered.

Deep ruby in color with brooding aromas of earth and brown-spices followed by dark cherries, black tea and apple wood smoked bacon with hints of tobacco box and rose petals.  The palate is fleshy and open yet bold and structured with big and chewy tannins.  Finishing with flavors of brown sugar, tamarind and crushed red fruits.  This wine will be at its best from 2007 to 2015.

Dominus

Dominus is the proprietary red wine produced in the heart of Napa Valley by Christian Moueix and his team.  Since 1983, their goal has been to express the unique terroir found at the historic Napanook Vineyard.

2003 will be remembered as a vintage with a very long growing season, one that continued into November for some blocks.  The beautiful fall weather permitted prolonged hang time, allowing the fruit to develop its complexity.  The 2003 blend is 88% Cabernet Sauvignon, 7% Cabernet Franc and 5% Petit Verdot.

The 2003 vintage is plum in color, with an aromatic nose of violets, raspberries and worn leather.  Flavors begin discretely with essences of cumin and dark red fruit that build up to a suppleness and elegance that is enveloping.  The finish is long, fragrant and fresh, with an intensity of tobacco and truffle notes.  The wine is charismatic, with a Bordeaux-like style.  We recommend decanting the wine prior to serving, to allow it to develop its full potential.  This is especially important when serving young Dominus wines.
