Wild Rice & Chorizo Stuffing

8 ounces chorizo
½ large onion, diced
1 cup fresh red seedless grapes, cut in half
4 cups cooked wild rice
½ cup chicken stock
½ cup St. Christopher Riesling
6 leaves of fresh sage, chopped
1 cup fresh bread crumbs
Salt to taste

In a large sauté pan over medium heat, sauté chorizo, onion and grapes. Once the onion has softened, add remaining ingredients and simmer until moisture is absorbed. To cook inside a turkey, stuff the turkey while the mixture is still hot. To cook outside of a turkey, add an additional cup of chicken stock and bake in an oven safe dish covered at 400° for 30 minutes. Remove cover and bake for another 15 minutes to brown.

Serves 8
