Grilled Tomatoes with Goat Cheese and Sage

Looking for a delicious side dish for your next barbeque?
Try these quick and easy grilled tomatoes—the perfect compliment to any grilled meat.
Throw some asparagus on the grill, then mix with fresh lemon juice and Gorgonzola and you
have a complete meal!

2 tablespoons My Brother’s olive oil
4 tablespoons chopped fresh sage
7 ounces Harley Farms fresh goat cheese
1 small shallot, minced
1/4 teaspoon salt
4 medium tomatoes

Combine cheese, onions, shallot, salt, and fresh sage in bowl. Season with pepper.
Using small sharp knife, remove coneshaped piece 2 inches wide and 1 inch deep
from top of each tomato. Divide cheese mixture among tomatoes. Grill on medium-
high heat with lid down. Cook until tomatoes are soft, about 5 minutes.

Makes 4 servings.
