Wine & Cheese by TCC Recipes

Smoked Porter Cheese Soup From our good friends at O’Fallon Brewery!      
1 stick unsalted butter
1/2 cup flour
3 cups milk
2 (14 1/2 ounce) cans chicken broth
5 cloves garlic, minced
1 1/2 cups O’Fallon Smoked Porter
1 pound 9 year aged Cheddar
1/2 teaspoon Himalania salt
Fresh ground pepper
1/2 pound smoked sausage, diced
4 green onions, thinly sliced
Pretzel Fiscelle, sliced    

Combine butter and flour in a large saucepan over medium heat; cook, whisking until mixture is golden, about 5 minutes. Slowly whisk in milk; cook, stirring until thick, about 5 minutes. Whisk in chicken broth; add garlic and beer. Reduce heat to low and cook, stirring often, for 30 minutes. Stir in cheese; cook, stirring, until cheese melts. Add salt and pepper to taste. Stir in sausage and cook until heated through. Garnish with green onions and serve with Pretzel fiscelle.
