Chocolate Raspberry Mascarpone Mousse

This rich mousse takes only about 10 minutes to prepare – a perfect Valentine’s Day dessert!

(2) Valrhona Bittersweet chocolate bars, coarsely chopped
1 cup heavy cream
1 8.8 oz tub E’piu Mascarpone
4 tablespoons Bonny Doon Frambiose raspberry dessert wine

Melt chocolate in a small saucepan over low heat, stirring frequently until just melted.  Remove from heat and let cool until tepid.  In a large bowl, whisk cream and mascarpone until smooth.  Then, beat the mixture until it just holds soft peaks; do not overbeat.  Stir about 1/4 cup of mascarpone mixture into chocolate and mix until smooth.  Fold in remaining mascarpone and stir in Framboise.  Serve immediately if you want a very creamy consistency. 

If you like a denser dessert, spoon into serving dishes, cover, and refrigerate until ready to serve.  Bring to room temperature before serving (about 30 minutes).

Serve with Bonny Doon Framboise. A perfect complement to this deliciously rich dessert!
