Marinated Duck Breast
w/Roasted Grapes
4 duck breasts skin on and scored
1 cup apple cider
1 tablespoon crushed juniper berries
½ tablespoon fresh thyme leaves
2 table spoons butter
2 cups red table grapes
1 tablespoon grape seed oil
¼ cup apple cider
2 tablespoons honey
Put the duck breasts, 1 cup apple cider, juniper berries, & thyme
leaves in ziplock bag & refrigerate
overnight. Remove from marinade
and pat the breasts dry. Sauté the
butter over medium high heat until
it begins to turn brown. Cook the
duck breasts skin side down for 8
min or until skin is dark gold. Flip
the breasts & cook for another 4
minutes. Let rest for 10 min. Coat
the grapes in grape seed oil and
roast on a sheet pan @ 400° for 8
min. Simmer ¼ cup apple cider,
grapes, & honey for 10 min. Serve
duck topped w/ grapes & sauce.
