Grown Up Mac n' Cheese

Try this twist on an old favorite.

1/2 lb pasta shells
2 3/4 cup whole milk
1/2 stick unsalted butter
1/4 cup flour
2 teaspoons salt
1/4 teaspoon each: ground pepper, nutmeg & cayenne pepper
4 oz. grated Widmer 4 year cheddar
4 oz. grated Gruyere
4 oz. grated Taylor Farms Gouda
4 oz. Harley Farms fresh chevre
Grated Parmesan Cheese

Cook pasta in large saucepan of boiling salted water until just tender. Drain.
Meanwhile, bring milk to simmer in heavy saucepan over medium-high heat.
Remove from heat. Melt butter in large heavy saucepan over medium heat.
When butter foams, add flour. Stir for 1 minute.
Whisk in hot milk and cook over medium heat until thick and bubbling, stirring occasionally, about 2 minutes. Remove from heat. Stir in seasonings.
Add cheeses and stir until melted andsmooth. Preheat broiler.
Add pasta to cheese sauce and toss to coat. Pour pasta mixture into baking pan.
Sprinkle with grated parmesan cheese.
Broil until cheese is melted and golden brown, about 1 minute.

Yields 6 servings
Pair with the Joel Gott Zinfandel for a mix of tang, jammyness, and spice!
