Lemon Caprese Salad

A fast, simple, and delicious way to take advantage of this season’s freshest ingredients!

1/4 cup chopped fresh basil
1/4 cup chopped fresh parsley
5 tablespoons Cassata Lemon Olive Oil
2 medium ripe tomatoes, sliced ¼ inch thick
½ pound fresh Ovolini mozzarella (2 pieces), sliced ¼ inch thick
Fresh ground Himalania pink salt to taste
Fresh ground pepper to taste

Place first five ingredients in a blender; process until smooth. Arrange tomato and mozzarella slices on a serving plate. Drizzle with herbed oil and season with fresh ground salt and pepper.
