Don’t be afraid of grilling the pizza dough. It’s easier than you think and keeps you out of the hot kitchen! Ingredients: 1/2 cup diced tomatoes (about 1/2 pound) 1 1/2 cups cubed Ovolini mozzarella cheese 1-4 ounce Harley Farms Chive Chevre log, broken into chunks 1/2 cup thinly sliced fresh basil 2 TBSP Cassata Olive Oil (any variety) 2 TBSP Balsamic Vinegar 2 large garlic cloves, minced 1 10 ounce frozen pizza dough, thawed 1/4 cup grated Antigo Parmesan cheese Mix first 7 ingredients in medium bowl. Let stand 15 to 30 minutes at room temperature. Oil grill rack and heat to medium-high. Stretch dough to form a 12X12 square, then cut into 4 pieces. Using a large spatula, transfer dough to grill rack. Close cover and grill until bottoms are brown, about 4 minutes. Turn squares over and immediately top each with tomato mixture, leaving a 1/2 inch border. Close cover and grill until pizza bottoms brown and cheese is melted, about 4 minutes.
