Feta Cranberry Pinwheels
One 8.8 ounce container of
E’piu Mascarpone
One 7 ounce package of
Valbreso Feta cheese, crumbled
1 cup chopped green onions
¾ cup of dried cranberries
Salt and pepper to taste
Four 10 inch flavored tortilla
shells (plain, spinach, tomato
basil, etc.)
2 TBSP Giovanni balsamic cream
In a medium mixing bowl, add
mascarpone, feta, onions, and
cranberries. Mix with a spatula
or spoon until you have a smooth
consistency. Salt and pepper to
taste. Spread ¼ of mixture
evenly over each tortilla shell.
Starting from one end, roll each
tortilla into a log. Cut each log
into 10 one-inch thick pieces.
Place on serving plate and drizzle
with balsamic cream.
Makes 40
