Cranberry Chipotle BBQ Meatballs
1 pound ground turkey
2 cups bread crumbs
2 egg yolks
1 cup ketchup
2 tablespoons white wine vinegar
2 tablespoons brown sugar
2 chipotle chilies, finely chopped
1 jar Stonewall Kitchen New England
Cranberry Relish
1 cup Lynfred cranberry wine
1/4 teaspoon salt
1/2 tablespoon Sonoma Farms Extra Virgin
Olive Oil
Preheat oven to 400 degrees. In a medium
bowl, combine the ground turkey, bread
crumbs, and egg yolks. Mix ingredients
well. Refrigerate for 5 minutes.
Meanwhile, combine the ketchup, vinegar,
brown sugar, chilies, cranberry relish,
wine, and salt in a medium sauce pan.
Simmer for about 15 minutes then remove
from heat. Using the palm of your hand,
roll the turkey mixture into 1 1/2 inch
diameter balls. Evenly coat a baking sheet
with olive oil. Place meatballs on pan and
bake for 12 minutes. Cover meatballs with
the cranberry chipotle sauce and bake for
another 5 minutes. Serves 8.
